Why grind size does what it does

Extraction is a rate problem. Coffee's soluble compounds — caffeine, chlorogenic acids, sugars, hundreds of aroma molecules — dissolve out of the coffee particle into the surrounding water at a rate that depends on:

  • Water temperature (hotter = faster)
  • Contact time (longer = more)
